STUFFED MUSHROOMS
This is a really yummy and hearty recipe which can be customised to your tastes. I basically use any approved vegetables which I have in my fridge and feel like. I think these would be fantastic with fresh basil, unfortunately I didn't have any on hand.
Ingredients:
Field mushrooms (I think two would be appropriate for a serve)
A mixtures of approved vegetables, in this instance I have used: onion, garlic, celery, grated zucchini, capsicum and baby spinach leaves.
Light cottage cheese (1tsp per mushroom)(optional**)

Method
Remove stalk from field mushrooms. In another bowl mixed up the chopped vegetables, add salt and pepper to taste. Top mushrooms with vegetables, finish with cottage cheese and bake at 180 degrees for approximately 20 minutes. Serve with a small side salad.
**Please note, cottage cheese is not part of the optifast program.

ReplyDeleteHave you tried the TF cauliflower bake? I had that last night and it was really yummy and filling. Mind you, I used half a head of cauli just for me, but only 250g ricotta. Mmmmmmm

No I'm yet to try the cauli bake, but it looks yum! I have a bit of cauliflower on hand so I might have to do it later this week (it depends on what veggies are looking suss and need cooking first)!
ReplyDeleteI made another lot of mushies similar to this, but just topped them with fresh basil, chopped up finely with garlic, a little bit of olive oil, salt and pepper (so like a pesto, minus the pinenuts). They were also delish!
